Italian Seasoning

This simple and delicious recipe uses Italian seasoning to elevate a variety of roasted vegetables. It's an easy side dish that pairs well with nearly any meal and brings out the rich, earthy flavors of the herbs.

Ingredients:

• 1 zucchini, sliced
• 1 bell pepper, chopped
• 1 red onion, chopped
• 1 cup cherry tomatoes, halved
• 2 tbsp olive oil
• 1 ½ tsp dried Italian seasoning
• ½ tsp garlic powder
• ½ tsp salt
• ¼ tsp black pepper
• Fresh basil or parsley for garnish (optional)

Instructions:

• Preheat the Oven – Set to 400°F (200°C).
• Prepare Vegetables – Wash and chop zucchini, bell pepper, onion, and tomatoes into bite-sized pieces.
• Season – In a large bowl, toss all the vegetables with olive oil, Italian seasoning, garlic powder, salt, and pepper.
• Roast – Spread vegetables on a baking sheet in a single layer. Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
• Finish & Serve – Garnish with fresh basil or parsley, if desired. Serve warm as a side or over pasta or quinoa.

Farmer Tip: For extra flavor, squeeze a little lemon juice over the veggies just before serving!
