Dried Oregano

These crispy, herby, and flavorful roasted potatoes are the perfect side dish for any meal! With the earthy depth of dried oregano, they pair beautifully with roasted meats, grilled vegetables, or fresh salads.

Ingredients:

• 2 lbs baby potatoes (or russet, cut into chunks)
• 3 tbsp olive oil
• 2 garlic cloves, minced
• 1 ½ tsp dried oregano
• ½ tsp salt
• ¼ tsp black pepper
• ½ tsp paprika (optional, for extra flavor)
• ¼ cup grated Parmesan cheese (optional)
• 1 tbsp fresh parsley or more oregano for garnish

Instructions:

• Preheat Oven – Set to 400°F (200°C).
• Prepare Potatoes – Wash and cut potatoes into bite-sized pieces.
• Season – In a large bowl, toss potatoes with olive oil, garlic, dried oregano, salt, pepper, and paprika.
• Roast – Spread potatoes on a baking sheet in a single layer. Bake for 35-40 minutes, flipping halfway through, until crispy and golden brown.
• Finish & Serve – Sprinkle with Parmesan (if using) and fresh parsley or oregano. Serve warm and enjoy!

Farmer Tip: For extra crispiness, broil for the last 2-3 minutes!
